Old-Fashioned Meatloaf with Brown Gravy & Mashed Potatoes
This classic comfort meal features a juicy, glazed meatloaf served alongside creamy mashed potatoes and savory brown gravy.
Ingredients
1. The Meatloaf
Meat: 500g ground beef (80/20 lean-to-fat ratio is best).
Binders: 1 egg, ½ cup breadcrumbs, 1 small finely minced onion.
Seasoning: 1 tbsp ketchup, 1 tsp mustard, salt, black pepper, and garlic powder.
The Glaze: A mix of 3 tbsp ketchup, 1 tbsp brown sugar, and a dash of vinegar.
2. Sides (Potatoes & Corn)
Mashed Potatoes: 2 large boiled potatoes, 2 tbsp butter, ¼ cup milk, and salt.
Corn: 1 cup sweet corn (canned or frozen) sautéed with a knob of butter.
Brown Gravy: 1 tbsp butter, 1 tbsp flour, 1 cup beef broth, and a pinch of black pepper.
Instructions
Step 1: Prepare the Meatloaf
Mix: In a large bowl, combine the ground beef, onion, breadcrumbs, egg, and seasonings. Tip: Do not overmix, or the meat will become tough.
Shape: Form the mixture into individual mini loaves (as shown in the image) and place them on a baking tray.
Glaze: Spread the ketchup and brown sugar mixture generously over the top of each loaf.
Bake: Cook in a preheated oven at 180°C for 25–30 minutes until fully cooked through.
Step 2: Potatoes & Gravy
Mash: Mash the hot boiled potatoes. Add butter and milk gradually until you reach a smooth, creamy consistency.
Gravy: Melt butter in a pan, whisk in the flour until light brown (making a roux), then slowly pour in the beef broth while stirring constantly until the sauce thickens.
Step 3: Plating
Place the mini meatloaf next to a large scoop of mashed potatoes.
Create a “well” in the center of the potatoes and pour the brown gravy into it.
Add the buttered corn and a slice of toasted garlic bread on the side.
