Cheesy Mushroom Baked Chicken

Cheesy Mushroom Baked Chicken
This dish is a crowd-pleaser—tender chicken breasts topped with savory sautéed mushrooms and a golden, bubbly layer of cheese.
Ingredients
Chicken: Boneless, skinless chicken breasts (halved lengthwise or lightly pounded for even cooking).
Marinade/Base: BBQ sauce (or a mix of tomato paste, honey, and vinegar), salt, black pepper, garlic powder, and paprika.
Toppings: * Fresh mushrooms (sliced and pre-sautéed with onions).
Shredded cheese (a mix of Cheddar and Mozzarella works best).
Fresh parsley (finely chopped for garnish).
Instructions
Prep the Chicken: Season the chicken breasts with salt, pepper, and spices. Coat them generously with BBQ sauce and place them on a baking tray lined with parchment paper.
Sauté the Topping: In a skillet over medium heat, sauté sliced onions and mushrooms in a bit of oil or butter until softened and lightly browned.
Assemble: Spoon a generous amount of the mushroom and onion mixture onto each chicken breast. Top with a heavy layer of shredded cheese (as shown in the top half of your photo).
Bake: Place in a preheated oven at 200°C (400°F) for about 20-30 minutes, depending on the thickness of the chicken, until the meat is fully cooked and the cheese is melted and golden brown.
Garnish: Sprinkle with fresh parsley immediately after removing from the oven for a vibrant finish.
Serving Suggestion: This goes perfectly with white rice, mashed potatoes, or a fresh green salad.
