Keto Personal “Lasagna” Bowls

 

Serves 4 (or 2 large portions)

 

🥣 Ingredients

Meat Sauce

 

1 lb ground beef (or Italian sausage)

 

1/2 small onion, finely diced (optional)

 

2 cloves garlic, minced

 

1 1/2 cups low-carb marinara (no added sugar)

 

1 tsp Italian seasoning

 

Salt & pepper to taste

 

“Pasta” Layer Options (Choose One)

 

3 cups zucchini slices (lightly sautéed first)

 

OR 3 cups Palmini noodles

 

OR 2 cups steamed cauliflower florets

 

Cheese Layer

 

1 cup ricotta cheese

 

1 egg

 

1/2 cup shredded mozzarella

 

1/4 cup grated parmesan

 

Topping

 

1–1 1/2 cups shredded mozzarella (or mozzarella + cheddar mix)

 

👩‍🍳 Instructions

1️⃣ Make Meat Sauce

 

Brown ground beef in skillet.

 

Drain excess grease.

 

Add garlic, onion (if using), marinara, seasoning.

 

Simmer 5–7 minutes.

 

2️⃣ Prepare Cheese Mixture

 

In a bowl mix:

 

Ricotta

 

Egg

 

Mozzarella

 

Parmesan

 

3️⃣ Assemble

 

In small foil pans or baking dishes:

 

Layer:

 

Meat sauce

 

Zucchini/low-carb pasta

 

Ricotta mixture

 

Repeat once, then top with shredded mozzarella.

 

4️⃣ Bake

 

Bake at 375°F (190°C) for 20–25 minutes

until cheese is bubbly and golden.

 

Optional: Broil 2–3 minutes for browning.
