“Lemon Cake”

 

Ingredients

 

For the Dough:

– 1 egg

– Zest of 1 lemon

– 125 g (1/2 cup) sugar

– 310 g (2 1/2 cups) all-purpose flour

– 5 g (1 teaspoon) baking powder

– 140 g (5 oz) unsalted butter, softened

– 1/2 teaspoon salt (optional)

 

Instructions

 

1. **Preheat the Oven**: Preheat your oven to 180°C (350°F).

 

2. **Mix Wet Ingredients**:

– In a large mixing bowl, combine the softened butter, sugar, and lemon zest.

– Beat in the egg until the mixture is smooth and creamy.

 

3. **Combine Dry Ingredients**:

– In another bowl, whisk together the flour, baking powder, and salt.

 

4. **Mix Together**:

– Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

 

5. **Prepare the Baking Pan**:

– Grease a round baking pan (about 9 inches) or line it with parchment paper.

 

6. **Bake**:

– Pour the batter into the prepared pan.

– Bake in the preheated oven for about 30-40 minutes or until a toothpick inserted in the center comes out clean.

 

7. **Cool**:

– Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

 

8. **Serving**:

– Once cooled, you can dust the top with powdered sugar and decorate with lemon slices if desired.
