Meatloaf and Mashed Potatoes with Gravy
Ingredients
For the Meatloaf
1½ lb ground beef
1 cup breadcrumbs
1 small onion, finely diced
2 cloves garlic, minced
2 eggs
½ cup milk
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
For the Mashed Potatoes
2 lb potatoes, peeled and cubed
4 tbsp butter
½ cup warm milk or cream
Salt and black pepper to taste
For the Gravy
2 tbsp butter
2 tbsp flour
2 cups beef broth
1 tsp Worcestershire sauce
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C). In a large bowl, mix ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and Italian seasoning until just combined.
Shape the mixture into a loaf and place it in a baking dish or loaf pan. Bake for 50–60 minutes until fully cooked and nicely browned. Let it rest for 10 minutes before slicing.
While the meatloaf bakes, boil potatoes in salted water until fork-tender, about 15–20 minutes. Drain and mash with butter and warm milk until smooth and creamy. Season with salt and pepper.
For the gravy, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1–2 minutes. Slowly add beef broth while whisking until smooth. Simmer until thickened, then season with Worcestershire sauce, salt, and pepper.
Serve thick slices of meatloaf over mashed potatoes and generously spoon warm gravy on top.
