🥩 Steak and Eggs with Crispy Fried Potatoes
Ingredients:
• 1 steak (ribeye, sirloin, or T-bone — about 8 oz / 225 g)
• 2 large eggs
• 2 medium potatoes, diced
• 2 tbsp olive oil (or butter)
• 1 tbsp butter (for the steak)
• 1 garlic clove, minced
• Fresh parsley (optional, for garnish)
• Salt and black pepper (to taste)
🔥 Instructions:
1. Cook the potatoes:
• Heat 1 tbsp olive oil in a skillet over medium-high heat.
• Add diced potatoes and cook 10–12 minutes, stirring occasionally until golden and crispy.
• Season with salt, pepper, and a pinch of garlic. Keep warm.
2. Sear the steak:
• Pat the steak dry and season generously with salt and pepper.
• Heat another skillet over high heat with 1 tbsp olive oil.
• Sear the steak 2–3 minutes per side for medium-rare (adjust for desired doneness).
• Add 1 tbsp butter in the last minute and baste with melted butter.
• Rest for 5 minutes.
3. Fry the eggs:
• In the same pan (or a clean one), fry eggs sunny-side-up or over-easy with a touch of butter.
• Season with salt and pepper.
4. Assemble & serve:
• Plate the steak, top with fried eggs, and add the crispy potatoes on the side.
• Garnish with fresh parsley or chives.
