Meatloaf with Mashed Potatoes and Green Beans

Ingredients:

 

– 1½ lbs ground beef

 

– 1 cup breadcrumbs

 

– 1 egg

 

– ½ cup onion, chopped

 

– ½ cup milk

 

– Salt, pepper, garlic powder

 

– 6 potatoes, peeled and cubed

 

– 4 tbsp butter + ½ cup milk (for potatoes)

 

– 2 cups fresh green beans, trimmed

 

– 1 tbsp olive oil or butter

 

Instructions:

 

Preheat oven to 350°F (175°C). Mix beef, breadcrumbs, egg, onion, milk, and seasoning.

 

Shape into a loaf, bake 50–55 minutes.

 

Boil potatoes until tender, mash with butter and milk.

 

Steam or sauté green beans with olive oil, salt, and pepper.

 

Plate meatloaf with a scoop of mashed potatoes and green beans on the side.
