Here’s a simple recipe for making layered flatbreads, like lachha parathas:

 

### Ingredients

 

– **2 cups** all-purpose flour (maida)

– **1/2 teaspoon** salt

– **2 tablespoons** oil or ghee (for the dough)

– **Warm water** (as needed, for kneading)

– **Additional ghee or oil** (for layering)

 

### Instructions

 

1. **Prepare the Dough:**

– In a large mixing bowl, combine the all-purpose flour and salt.

– Add the oil or ghee and mix until crumbly.

– Gradually add warm water, kneading until you have a soft and pliable dough.

– Cover the dough and let it rest for at least 30 minutes.

 

2. **Divide the Dough:**

– After resting, divide the dough into equal portions (about 8-10 balls).

 

3. **Roll and Layer:**

– Take one ball of dough and roll it out into a thin circle on a floured surface.

– Brush the surface with ghee or oil.

– Sprinkle a little flour on top and fold the circle in half. Brush more ghee and fold it again to form a triangle or roll it into a cylinder.

– Roll it out gently into a flat disc.

 

4. **Cooking:**

– Heat a tawa or flat skillet over medium heat.

– Cook the paratha on one side until bubbles form, then flip it over.

– Apply ghee on the cooked side and flip again. Cook until it’s golden brown on both sides, about 2-3 minutes.

– Repeat the process for the remaining dough balls.

 

5. **Serve:**

– Stack the cooked parathas in a container lined with a cloth to keep them warm.

– Serve them hot with yogurt, pickles, or your favorite curry.

 

### Tips

 

– For extra flaky layers, you can add more ghee or oil when rolling and folding.

– Experiment with stuffed versions by adding spiced potatoes, paneer, or other fillings before rolling.
