🥩 Prime Rib Roast
Ingredients
• 1 (5–7 lb) prime rib roast (bone-in or boneless)
• 3 tbsp olive oil or melted butter
• 4 cloves garlic, minced
• 2 tbsp fresh rosemary, finely chopped (or 1 tbsp dried)
• 1 tbsp fresh thyme leaves (or ½ tbsp dried)
• 2 tsp kosher salt
• 1 tsp freshly ground black pepper
• 1 tsp onion powder (optional)

Instructions
1. Prepare the Roast
• Remove the prime rib from the refrigerator and let it rest at room temperature for 2 hours before cooking.
• Pat it dry with paper towels to help the crust form.
2. Season the Meat
• In a small bowl, mix olive oil (or butter), minced garlic, rosemary, thyme, salt, pepper, and onion powder.
• Rub this mixture evenly over the entire roast.
3. Preheat the Oven
• Preheat to 475°F (245°C).
• Place the roast, fat side up, on a rack in a roasting pan.
4. Sear the Prime Rib
• Roast uncovered for 20–25 minutes to form a flavorful crust.
5. Roast Low and Slow
• Reduce oven temperature to 325°F (165°C) and continue roasting:
• Medium-rare: 15–16 minutes per pound (internal temp: 130°F / 54°C)
• Medium: 17–18 minutes per pound (internal temp: 140°F / 60°C)
6. Rest Before Slicing
• Remove from oven, tent loosely with foil, and let it rest 20–30 minutes.
• This allows the juices to redistribute.
7. Slice and Serve
• Slice against the grain and serve with au jus or horseradish cream.
