Fried Alligator
Cut alligator tail meat into bite-sized pieces and soak in buttermilk for 1 hour to tenderize. In a bowl, mix flour, cornmeal, paprika, garlic powder, cayenne, salt, and pepper. Drain the meat and dredge each piece in the seasoned coating. Heat oil in a deep skillet until hot and carefully fry the alligator in batches until golden brown and crispy. Remove to a paper towel–lined plate to drain excess oil. Serve hot with lemon wedges and a side of remoulade or spicy ranch dipping sauce. Perfect as an appetizer or Southern-style snack.
