Ingredients:

4 boneless, skinless chicken thighs or breasts
1 cup buttermilk
1 teaspoon hot sauce
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper, to taste
1 cup all-purpose flour
½ cup cornstarch
Vegetable oil, for frying
For the Hot Spice Paste:
3 tablespoons cayenne pepper (adjust to your heat preference)
1 teaspoon smoked paprika
1 teaspoon brown sugar
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
3 tablespoons melted butter
For the Sandwich:
4 hamburger buns, toasted
Pickles, for topping
Mayonnaise (optional)
Instructions:
1. Marinate the Chicken:
In a bowl, mix buttermilk, hot sauce, garlic powder, paprika, salt, and pepper.
Add chicken, ensuring it’s fully submerged.
Cover and refrigerate for at least 2 hours (or overnight for best flavor).
2. Prepare the Spice Paste:
In a small bowl, combine cayenne, smoked paprika, brown sugar, garlic powder, onion powder, salt, and melted butter.
Set aside for later brushing.
3. Coat the Chicken:
In a shallow dish, mix flour and cornstarch with a pinch of salt and pepper.
Remove chicken from marinade, letting excess drip off, and dredge in flour mixture.
Press gently so coating sticks well.
4. Fry the Chicken:
Heat oil in a deep skillet or Dutch oven to 350°F (175°C).
Fry chicken 6–8 minutes per side (depending on thickness) until golden brown and cooked through (internal temp 165°F / 74°C).
Drain on paper towels.
5. Assemble the Sandwiches:
Brush fried chicken generously with the hot spice paste.
Place chicken on toasted buns.
Top with pickles and mayonnaise if desired.
Serve immediately with sides like coleslaw or fries.
